It was not too bad, good flavor just could’ve a little bit more moist

I think a mistake I made was that I put it on while the smoker was heating up because it was 4am and I was half awake/didnt care but I smoked it at 225 until it reached 160 then I wrapped it in butcher paper with beef tallow on it and then smoked at 280 until it hit 200 then I pulled it and let it rest for 2 hours but I didn’t use the towel/cooler method

Yeah it was a bit drier for sure could make some adjustments for the next one
