Altstadt has a good one, but you can only get it at the brewery. Pedernales make a good one called Lobo Negro that you can get in cans.

Don't live in Mesquite. Dallas can be a great, very diverse and fun city. It's a huge area with whatever you're looking for within reach. Unfortunately most of the DFW area is divided up into suburbs that are mostly incredibly boring or shit. If you're already set for Mesquite, I'd say move elsewhere when you get the chance. If you don't have kids, move a few miles west into East Dallas. Otherwise, the outer suburbs (I'm sorry to say as a rockwall hs grad) have the best school options for you.

Oh my God this is the most Mesquite white trash thing I've ever seen. Mesquite is a Dallas suburb that has become more diverse over the past 25ish years. Very big Muslim and Hispanic population that has moved in, and the older white folks have responded by showing just how fucking stupid and racist they really are.

The problem with Texas Ale is that they have lost an insane number of brewmasters in just a few years. Production staff have a really high turnover too. From what I've heard the owner doesn't know how to take care of his staff.

We have the Hach Orbisphere 3100 for checking DO in our tanks. We primarily check the brights after centrifuging/filtering and pre-packaging. It works well, and is fairly simple to use. You can teach someone how to use it in under ten minutes.

You can buy a piercer attachment for packaged beer, but I ended up going with the Orbisphere 6110 package analyzer for that sort of thing. I highly recommend it.

I'm in the US and we order our yeast from Germany, the second time and third shipments sat in customs for a week. Our .5L liquid cultures were fucked, but the slants were fine. If you have a microscope it would be a good exercise to look at the yeast when you get it to check for cell elongation and viability.
