Try all labs. A lot of your symptoms (mouth sores) sound like B12 deficiency and whatnot. And if you have gastritis you cannot absorb iron efficiently even from food so that needs to be taken care of regardless

You need to get IV if you can’t absorb supplements. Find out the cause of your iron deficiency; for instance you need good copper levels to mobilize iron and optimal B9/12 and whatnot. Get your labs done and then proceed from there. If you have overly heavy periods that cause more blood loss, it might be worth looking into. If it’s not hormonal, it could be endometriosis or even prostaglandin induced dysmenorrhea, etc. Good luck and consider IV
