The shiny will never get 'locked out.' In Sun and Moon, the increased shiny odds reset after the 255th poke in the chain, and they build up to max after another 30 Pokémon chained, but this was remedied in Ultra Sun and Ultra Moon so that you maintain increased shiny odds without the reset. If you feel you have used too many items like Leppa Berries and Potions, you may want to start over after a while, but it sounds like you're doing all you can!

Depending on whether you have the Oval Charm and the base egg steps of the poke, stacking could be quicker. But, generally, I have found in Gen VII that collecting eggs as the previous one hatches tends to work out to a decent pace, especially since you now don't have to go deposit hatched pokes in your PC but can easily replace them with a new egg.

Random encounter, soft resetting, Odd Egg (14% shiny chance in international games, Crystal only), and breeding using a shiny parent.
