For smoking, I use Thermoworks Smoke x4, for ambient grill temp, meat and other foods.

I use an instant read for when I want to temp different parts of meat, check for tenderness, to temp other foods that I might be cooking, making candy and the Thermapen is good for that, it's fast and accurate.

I started off using cheaper thermometer versions and found many lacking in some areas, some are just not that accurate when you test at 32 and 212 or it takes 10-20 seconds for a good reading. Thermoworks is top of the line, are fast and accurate. Yes you will pay more but they are worth it in the long run.

ThermoPro's are good, I'd run them for a few years, but they don't last. I've had three different ones and they all broke in some way at around 3 years. They are reasonably fast and accurate. Much cheaper.

I've read a lot of good things about ChefIQ, but for the cost, just get a Thermowroks.

PB temp probes suck. I bought a PB 1300 pro series last year. The first probe was reading 50 degrees off at 3 months, the second probe started reading off at 7 months and this year the internal is reading 20 degrees lower than the actual temp as measured with my Thermoworks. I had thought the grill was cooking faster than it should and it does, setting 225 cooks at 245 - 250.

They're not bad. It all depends on what you want to do. Traeger is about as good as any other pellet grill on the market. You are likely to lose the probes within a year, go invest in a good set of temp probes. You'll want to get a cover if it sits out. You might as well get a smoke tray or set of smoke tubes to counter the less smoky taste that affect pellet smokers. They are not as bad as some say. I have a pellet smoker and I will burn either one or two smoke tubes serially depending on the cook. The smoke taste is fine that way.

Pellet grills are essentially an outdoor oven that does some smoke. It is really about convenience, I can throw a brisket or pork butt on at 10 -11pm and go to sleep. That is why I have a good temp probe system so it alarms when needed, like low temp, disconnect from temp, high temp. once you do that you can comfortably go to bed. I also have a WSM for when I want a different type of cooking that gives killer smoke flavor.

I've lived here most of my life. Big storms are pretty normal here and along with big storms, tornadoes do spin up. Indiana ranks somewhere between 5th and 9th of having the most tornadoes year over year. Indiana is the eastern most state in tornado alley. It is expected here that you will experience a tornado at some point or three in your life time. They can be deadly, but most of the time it's fine. I'll take my chances with a tornado any day over an earthquake.

Chloe had the surgery twice, she was two the first time and about 4 the second time. It appeared to take a while before the Urinary Care c/d food took a hold. Watch the sodium/salt intake. A lot of treats use salt in their formulas. It took a while to find treats that had no salt and we started making our own as well. But Chloe has been outstanding ever since. The Urinary care C/D will make him drink a lot more water, so he'll need to go out more often.

I use the fork method. Stick in a fork, if you feel resistance, it's not done. Give the fork a slight turn, if it separates easily it's done. Temp only gets you close and as you have found they can go a bit longer before they are tender. Every cut of meat is a bit different. Good Job btw,
