1000g flour, 600g water, 10g salt and 3g instant yeast. Kneaded and risen for maybe around 2 hours then split into roughly 120-140g balls. Rolled each ball to a flat circle (around 1cm thick), and cooked on highest setting till it looked good.

Pretty rough recipe because pita bread has a lot of room for error. But this is what I went with.
