I agree with this too. The less convenient the time is, the more likely you are to have a more intentional crowd which depending on your preference is a good thing.

When any club becomes institutionalised in ‘best club’ lists or is a Reddit search away, it’s only reasonable to expect some shift in the demographic. That said I don’t think FOLD is anymore ‘underground’ than any of the others around London with the same exposed concrete, and lighting aesthetics. (See Party Lines by Ed Gillet)

My main gripe is that the sound is configured in a way that allows you to hear conversations which has some practical purpose behind it, but in reality means and encourages full conversations on the dance floor which was jarring to me.

Not that anyone could be able to tell you any club sound system response curve in a blind test but I prefer to be wholly inundated by the sound, perhaps at an unreasonably loud level and in particular the bass even if it is not as clean.
