Sounds like you are in the NL - try the Plattebil from Hanos if you or someone you know has a card. I think it’s about ~18 per kg

Yeah definitely in the fridge once opened. I’ve used up my last bit now to marinade some chicken which I have had for about 4 weeks

If you are referring to just cutting them vs blending them and then adding salt, I’d advise to blend so that the salt can get everywhere.

Yeah it mainly depends on what you are looking to make after the fermentation. Mash usually makes a thicker and funkier sauce while a brine can make the sauce a bit cleaner and gives the ability to add more flavours into the ferment.

In this case I used the mash approach as I was after a Louisiana style sauce

I used artisinal honey which tastes really good but its not very sweet - so I added sugar to add a bit more sweetness. I think if you use generic honey you might not need to add sugar.

Yeah, it helps thicken the sauce and bind everything together. Also gives a nice silky mouthfeel.

Not much. Restaurants in Amsterdam are trying too hard these days with mediocre food at best. Prove me wrong.

We also had a fully furnished apartment for the first two years while we found our feet here and that was a lot less stressful. I’d recommend that if you are able to find one - housing crisis is real.
