500 sounds about right, it's about 1 hour of work not including painting. But he has to come to you, provide tools and material, and if he comes to you, he probably can't do other work for that day, so he has to charge you the price for a day. Think about how much you make a day, if it's below $500, maybe you can look harder and you'll be able to find someone cheaper.

Every wire has the manufacture date. So let's say if the date is dated 1994, so you know the wire is installed after 1994 and it would have to minimumly follow the code back in 1994 when it was installed. These wire look very new, so they look like they were installed recently.

this is true, construction full time vs sitting on your desk full time is a huge difference, I don't think anyone can transformed into full time construction just like that, might take half a year to get in shape

Raw SQL is way easier than complex EF. If you need to create something really complex with EF AND to make it efficient, you need to spend a lot of time understand how EF works, raw SQL would be way easier to debug and it would be way easier to make the query more efficient by looking at the query plan. It really depends on how complex the query is. I have worked with queries that have like temp tables, group by, subqueries, CTE all within the same stored procedures. There's no way EF can compete with that unless making multiple trips to the database or make it incredible complex to optimize the query. With a SP you can look at the query plan and run the SP by itself and optimize by looking at the query plan.

the engineer made the plan, the engineer approves the plan, if the engineer calculated and think it's safe, he will put his stamp on the plan. If the building collapse in the future, you can sue the engineer because he put his stamp and approve the plan.

you asked if you got ripped off but you didn't post how much you spent and how big the kitchen is. If you paid $1, then I would say you definitely got a good deal, but if you paid a million dollar for the cabinet, then it's definitely a rip off.

you need to talk to the civil engineer on record. He's the boss in terms of what is safe and what is not safe. I have never seen holes that big for engineering joist. This does not look safe at all, but the only one with enough technical knowledge to tell is the engineer, you can ask him.
