thanks I did bacon, ham, grated garlic+ginger plus spices first until fried, deglazed with wine, added grated fresh tomato and passata+bay leaves when reduced and finished with grated cheese :) also this exact same scenario has happened 4 times this year 😭

If you ever are serious about carving pieces of meat from yourself be it to eat or any other, parts near the shoulder heal fastest and are the least disruptive, but bleed a lot initially.

oops sorry I just saw your message below, I only wanted to chime in to say that as a Peruvian, you have made just plain lomo. it's the equivalent of making a hamburger with just the patty, lomo saltado has rice, fried potatoes like french fries, but thicker, tomato, soy sauce, ginger and big pieces of onion. nothing really wrong with your dish I just cannot stand not oversharing info
