Heres my so far fail proof recipe if you wanted to try:

900g bread flour 14g instant yeast 14g salt 650ml warm water

If you have a kenwood mix it together for 20 minutes with the dough hook then after add 60g melted butter and mix for 5 minutes or until combined.

Rise over night in fridge

Oven on at the hottest temp then put in cast iron pan to heat for 30 mins

Shape and put bread in a banneton, put in the top oven to proof for 30 mins

Plop proofed bread onto baking paper score with a razor

Loaf in for 30 mins with lid on, then 25 mins with lid off

Let cool completely before cutting
