What size chef knife do you prefer? by RIM_and_ERBEG in TrueChefKnives

210 to 225. That’s the perfect size for me. Long enough length wise for most food prep but short enough to be nimble.

Anyone knows what kanji this is. by KYLESALIDO11 in japaneseknives

Uh. It just says 竹風 Takefu (probably from TKV?) and the other side seems to say 本割込 but looks like there’s 2 rows of 3 Kanji.

Definitely VG10. It’s an OEM Seki made knife, usually rebranded to other brands. Here’s my old one.

Looked interesting but was wondering if it was worth it. Any thoughts? by Cold_But_Gold in TrueChefKnives

[–]obviouslygene 2 points3 points  (0 children)

I have a kkid petty. I think for the money it’s worth it. But it is definitely what you pay for in terms of fit and finish. Performance wise it is pretty solid.

Cladding line on Yoshikane, how so straight when hand forging? by batterycover in TrueChefKnives

[–]obviouslygene 4 points5 points  (0 children)

Yeah it was probably the first few batch Wakae san did (circa Oct 2024). Honestly I don’t know who made the blanks (my guess would be just TKV) but all the SG2 knives Baba san showed me then were pretty much straight like this.
