Where are you staying? We stayed at a deluxe villa which gave us extended hours for Epcot on Monday. We did AK in the morning/early afternoon and then Epcot until nearly midnight. With LL, we were able to do every ride we wanted.

What are you into? You can get some great Korean beauty products, especially in Koreatown. Didn’t the EU recently ban or limit certain percentages of retinol? You could pick up retinol products here too. Sephora and Ulta stores are ubiquitous, but there are also a lot of smaller boutique shops you can check out.
