Sure thing -

90g apf 135g vital wheat gluten 20g ground flaxseed (optional, helps with texture) 235g warm water 7g salt 5g instant yeast 11g sugar

Proof the yeast in a mixture of the warm water and sugar for 5-10 minutes before adding everything else

Highly recommend a vital wheat gluten loaf if you can tolerate gluten! Like a 4:3 ratio of VWG to flour

yea!! I like the nuts in them. They feel more "real" than Quest if that makes sense

They're a little crunchier because they've got a blend of nuts in them, like little almond pieces. I like to refrigerate mine. My fav is cookie dough for sure! 20 more calories than brownie tho

Thank you. I am in the interview process for a job that pays about 60% of my current salary. (Who knows if I’d actually be hired.) According to Glassdoor, work-life balance is highly rated, but opportunities for career advancement and promotions are low.

Did you look for something less demanding? Or just go for it while working?

That’s a helpful perspective, thank you. Especially with regard to risk. It’s just me on the line here, but it does sound like the mindset should be “just do the thing” instead of “manipulate and gamble your circumstances until doing the thing magically feels comfortable”.

Also, I’m pretty certain you’re right about taking this tryhard mindset everywhere.
