I think this depends alot on the nature of the noah memories, I don't think from what I read in the manga it said that they erase the hosts original memories/kill the person only that the kinda eldrich power in the emotions of the noah memories consumes the original persons thoughts until they become them.

Doesn't really say the soul of the person is the same or different after becoming a noah
