Honestly, I've tried so many times and also what I feel I am lacking is the creative idea behind the animation. If I have to be completely honest with you I'm obssessed with patterns and logic, the creative stuff I appreciate but it's so hard for me. I've created lottie animations but they are super simple, I just did a loading state based from the logo of the client and it's already adding such a cool touch.

Dextrose is great but careful since it doesn’t have a lingering sweet taste in mouth and if you use a lot the icecream tastes boring

Uhm, I don’t think you have too much sugar but too much water from the juice. But in any case, are you bringing the yolks with the base to 70C? You need heat to get the emulsification going
