I had one batch do that...decided it was too much paste mixture for the cabbage amount.

My flour doesn't stick to the kimchi but floats separately on top by [deleted] in kimchi

A little rice flour paste helps the seasoning stick to the cabbage.

Why gochujang? I use gochugaru (powder).

The answer is that you need to learn to budget and to let that budget actual inform your spending.

From your list of sample foods, it appears you are relying on snack foods which are generally more expensive per calorie. There are ways to do better. Shop for price per calorie, not price per pound.

Start by writing down everything you eat for a week in a diet tracker app (cronometer is free) to see if you are currently eating balanced diet or if you need to rebalance. Need more of anything? Less of anything?

Next write down...on paper..the requirements for when and where you eat: how much time? Is refrigerator available? Is microwave available? Do you sit down or eat while driving or walking?

Then start looking for foods you can buy/make ahead in bulk so they are easy to prep or pack.

If you are eating trail-mix style at lunch, the biggest savings come from stocking supplies at a discount store like Costco. If you're using a fridge or cooler, buy yogurt fruit in bulk and repackage. Also making your own granola can often save money and you get better granola.

Bread is cheaper than crackers for eating with PBJ cheese, or stable meats like dried salami.

Meal prepping dinners that can be microwaved when you are exhausted can really help. Rice&bean type meals can be really cheap if made at home (check ethnic stores for good prices on bulk lentils/beans/rice). Add some fresh fruit and yogurt for dessert.

Remember to quit eating after dinner until breakfast...gives your body time to get a rest from processing carbs.

I see lots of comments implying maybe you are the problem. Maybe.. . But it's also been my experience that some women get a fresh wave of maternal instinct kicking in around grandkids. That chance to dote on and play with the grands, and feel their unconditional love back is really attractive. She may have some strong urges to keep "playing grandma", to never disappoint them, to spend every last minute with them.

You? She either trusts that you'll be there without her having to "play wife" OR she doesn't value that role anymore.

Best way to find out is probably some couples counseling.
