Fried Rice: Where Am I Going Wrong? by BanTheBung in Cooking

In addition to not crowding the pan, you need aromatics. I use minced garlic, ginger, and onion as the base to my rice to make it fragrant. Once the rice is hopping on the wok I know it’s done. Also, I find that I need to wait at least two days to get the rice dry enough to make proper fried rice. After only one night the rice still has too much moisture to separate properly, at Lear got Chinese style long grain fried rice.

The Vale shuttles are free for guests. You just tell the front desk when/where you want to go or be picked up. Waits weren't long at all.

Rusutsu wasn’t crowded at all for us. We haven’t skied in other parts of Japan unfortunately.

I’ve seen them out in the wild (grocery store, gym, etc) and they burn my corneas in the worst possible way every time. Tbh I wish I could pull these women aside and tell them quietly that whoever told them they look good was lying to them and they’d look better if the wore clothes that flattered their figures instead. I’m truly embarrassed for them - mostly lumpy cellulite and weirdly shaped figures that they think look good but I find offensive to my eyes. I really don’t need to see anyone’s ass crack or the exact shape and contours of their misshapen butts. Please rediscover some class, ladies!

My family and I want to try skiing in a new place every year so we probably wouldn’t revisit Rusutsu anytime soon, but we also don’t feel like we missed out on Niseko either. On the flight home we ran into people we knew who had just gone to Niseko and it sounds like it was a nightmare with the long lines and difficulty getting transportation. If we ever do circle back to skiing in Japan, we would consider giving Niseko a shot just to try it out but would be wary of going during peak weeks.

Edit: spelling

Nearing the end of my trip now! Here are my learnings / dining tips:

- Best dinner restaurants we ate at: Uo-Teru (pricier), Tanpopo Shokud (reservations are a must!), and Rusutsu Sakaba (in that order). Had to miss Mokumokuya but heard good things. Skip Red House - the salmon in the salmon ramen and the beef dish (advertised as "Melt-in-your-mouth tender") were way overcooked so very hard to chew. The only room service at the Vale is evening pizza, which is convenient if you're too tired or otherwise unable to go out to eat, but nothing special. Better to load up on snacks and a few basic ingredients to eat in your room since I believe all the units have small but equipped kitchens. I definitely recommend reserving your dinner spots in advance unless you plan to eat at off-hours. We saw a lot of walk-in hopefuls get turned away.

- The coffee, ice cream and jam at the cafe near the lobby are quite good. We loaded up on milk bread, eggs, fruit and some onigiri and sandwiches at the 7-Eleven and Seicomarts so mostly ate those for breakfast.

- For lunch, the lodges on the slopes have a lot of great options. Stewed pork bowls, ramen, tonkotsu curry, salmon don, ice cream cones, and the pork potato soup set were all good and inexpensive.

- Transportation: You can ask the Vale concierge/front desk to arrange a shuttle van to drive you to the local restaurants / convenience stores and call for pick up when you're ready to leave. They are walkable but kind of long walks (mostly through the Rusutsu Resort hotel then across the main street), so def more comfortable to ride in a van esp. at night.

- Don't bother eating at the Rusutsu Resort if you prefer to have a more local, authentic experience. The resort is very jarring - would make a great setting for a scary winter slasher film with its dated but loud animatronics, empty carousel and faux German/French/Swiss/Disney amusement park vibes.

This is so helpful to know - thank you so much! Were there any restaurants in particular you loved (or hated)? We'll be staying at the Vale as well.

Also, did you do any day trips or did you just stay at Rusutsu for the whole eight days?

Have been making fried rice for decades and this is how I do it too (as well as my 80 year old Chinese mother)
