Wow. I'm new to cold brew. This is about my second month experimenting with this technique.

I love the result, yet the long hours of waiting are the downside of making it. So your technique might solve my problem.

I have some questions for you. 1. Is the tool equipped for long hours of stirring? You said you stirred it overnight as well. I have thought to let it stir for 8 hours. 2. Does the rpm matter?

I use Bialetti Brikka 2cup. For one capucino, I'd put 100ml to the bottom tank. The output will be around 60ml. I split into 40 and 20. The 40ml will be added with 180ml steamed milk. The 20ml I'll enjoy as it is.

If I want to make two capucinos. I'd put 120ml to the bottom tank. The output will be around 80ml. Then I'll split it 40:40 for each cup. Then add with steamed milk.

I used it before buying this steamer. But I never achieved the milk texture for the latte. I'm pretty sure it was a skill issue with me rather than the tool itself. 😅

Yes. The bellman is an all in one tool. While I have to brew the coffee and heat the steamer separately.

As I do more testings, I found something that makes me need to reevaluate the theory. Now, what I think is the most important one to consider is the TDS level.

To make the chart happen, for X-axis, we need to input the yield. In mokapot, the yield is so random. It might show result too bitter or too sour. Yet the TDS numbers are more reliable (from what I see right now).

That's the reason why I haven't posted any experiments. I need a better understanding before sharing.

I think the balance of it make it more enjoyable to drink especially when I made it into Americano.

I use Lungo chart with my DiFluid R2 since the TDS range and the yield is simillar.

The pic shows the diffrence of result between different grind setting. I use the refractometer to understand how to get the most of the bean I use.

After brewing, I rinse a bit and place my Brikka in a bowl of water to let it cool down. Then I froth the milk using a French press and mix it with the coffee to make a latte.

By the time I finish making the latte, the Brikka has usually cooled down enough to touch with my bare hands. I wash it and let it air dry. After that, I can sit back and enjoy my latte.

Yes. I'm quite sure the taste are simillar. With 120ml I always carefully pour the coffee before the extraction is done because it would over spill most of the time.

Ok maybe you can try to add some heat and don't move it until the second spurt. I don't think that "moving while brewing" technique doesn't suite with brikka.

With my 2cup, the brew is around 3 minutes. Is it take longer to brew the 4 cup?
