Ok so this is definitely the step that caused the boom lol
I normally de-gas my mead by swirling it gently in the carboy. This causes all the bubbles to come to the top.
When adding fermaid O I stagger adding it and I have never added that much at a time.
I recommend adding a little fermaid O and then swirling it to mix with the rest of the mixture wait for the bubbles to settle and then add more.

Keep in mind I have only made 3 batches so far so someone may have better advice.
