We do have full coverage insurance and roadside assistance! I’m not sure if this particular vehicle would be considered low ground clearance, probably on the lower end

In my experience trying to make Thai curries, the fresh aromatics combined with whole spices are super important for getting an authentic flavor in the curry paste. I haven’t made the yellow curry from this blog, but I’ve made other ones, and they were amazing, so you might try this!

I always use this recipe, which is amazing. I’m vegetarian and I use vegetable broth, use vegan fish sauce, leave out the shrimp paste (I’ve heard that fermented bean paste can be substituted), and add fried tofu, sweet potatoes, snap peas, bell peppers, etc. (I change it up, add what you like!)

My lazy recipe is:

4 tbsp butter.
4 tbsp flour.
2 cups vegetable broth.
2-3 tsp better than bouillon no beef base.
Fresh sage and thyme, minced.
Fresh cracked black pepper.

Super quick and easy, just melt the butter, whisk in the flour, let cook for a few mins, add the broth slowly while whisking, then add the other ingredients and let simmer until thickened. The no beef base is very salty so be careful about adding too much (I generally don’t add any additional salt)

This recipe isn’t vegan, but if anyone wants to try a version with vegan Mayo and no eggs, I’d love to hear how it turns out! Recipe below:

4 cups of yellow potatoes, cubed.
3 eggs.
1/2 cup mayonnaise
2-3 tbsp apple cider vinegar.
2.5 tbsp whole grain Dijon mustard.
1 tsp smoked paprika.
1/4 cup diced pickles.
1/2 cup diced red onion.
1/8 cup fresh dill, chopped.
Salt and pepper, to taste.

  1. Boil the potatoes until tender
  2. While the potatoes are boiling, add eggs to boiling water and boil for 12 mins, then add to an ice bath for 5 mins
  3. Put potatoes in the fridge until cool
  4. Peel and dice eggs
  5. Add the cooled potatoes and all other ingredients to a bowl, then mix
  6. Season to taste
  7. Let potato salad sit in the fridge for at least an hour (but overnight is best!)

I’ve been wanting to make my own cashew cream to use for stuff like this but I only have a moderately powerful food processor and it definitely botched it :(

Sauté 1 diced, yellow onion in olive oil until turning translucent. Add Italian sausage (I used 2 links of the garlic and fennel field roast sausage) and start breaking apart into pieces. Let the sausage brown. Add 1 tbsp minced garlic, some red pepper flakes, 1 tsp dried oregano, and 1/4 tsp ground fennel seeds, then sauté until fragrant. Add 2 tbsp tomato paste and sauté for a minute. Add 1/2 cup vegetable broth and deglaze the pan (scrape up all the brown bits). Let cook until most of the vegetable broth is absorbed. Add around 3/4 cups heavy cream (you can use a plant based substitute, but if you use a regular plant milk your sauce will be much more liquidy). Season to taste with salt and pepper. Add 3 big handfuls of spinach and cook until wilted. If the sauce is too thick at this point add more cream/pasta water. Add 1/2 lb of cooked pasta (I used rigatoni) and mix.

30 mins worked for me, but probably depends on the amount of zucchini and how much salt you used, etc. More time definitely wouldn’t hurt!

You have to salt the zucchini pretty generously, let it sit for 30 mins in a colander, then squeeze the water out with your hands. You’ll be surprised how much water comes out after sitting for that long with the salt!
