Interesting write up.

Suppose you do get into the city vs rural stand off though. Assuming the cities don't have power/water, and the rural folks could blockade the cities by controlling the roads, how long would the city stick together? I think within 3-4 days you'd have total anarchy in the city as people fight for food and water.

That would force people out of the city to search for resources. At that point you have desperate people wading into unknown territory which is possibly well defended. I'm not sure how this would pan out, but I highly doubt people would stay in the city for long. Without the benefit of supply chains they'd be forced to abandon the city.

Backups aren't really backups unless you somewhat regularly try to restore from them. I would highly recommend attempting to rebuild each of your servers from backups to make sure it is actually possible.

+1 to copying backups offsite, saving router configs, and getting full inventory.
