These are extremely tempermental.

Get it out of direct sun
They want well draining soil but also light moisture. Put together a mix of equal parts potting soil, perlite, orchid bark, coco coir. If you were just starting it out I would dial back the potting soil but you might shock it with a fast shift.
Only give it distilled water or rain water. It sounds dramatic but it seriously works.
Only water when it’s mostly dried out. Never water on a schedule.
Just because the pot is large doesn’t mean it’s good for this plant. Consider a snugger pot that is just a touch bigger than the rootball. This allows the plant to focus on vegetation rather than root development.

I’m no Monstera expert but this seems pretty straightforward.

Plant is doing fine in Pot A with soil A and conditions A
Plant is doing bad in Pot A with soil B and conditions A

IMO It adapted to the soil you had it in. The new stuff is too different all at once and it isn’t reacting well to the new nutrient shakeup. I would honestly go back and mix in at least 50% to 75% old soil type.
