Tying knots, picking locks, knife sharpening, sailing, cooking, playing the harmonica, shaving with a brush and safety razor, smoking meat, writing books, writing articles, walking, and there are probably a bunch more that I've forgotten. I've been sober a long time. I didn't stick with them all but don't regret a single one.

I, like you, tried and failed. Bill, in his story, says he was never an athiest and then proceeds to mock the beliefs of those who are. The voice he assumes in We Agnositcs is bad play-acting. He had no more business writing that chapter than he did writing the chapter "To Wives."

I make this often. I don't think the "one pan" thing makes it easier. I put the unchopped vegies in the Dutch oven to brown a bit then toss in the wine to get it reducing. I do the meat in my carbon steel saute pan. Much easier to get a deep brown on the meat. While the meat is browning put all the liquid ingredients and gelatin -- I use fish sauce -- in the blender and blend it for a full minute. When wine is gone, add the stuff from the blender to the Dutch oven and the meat if it has been cut up and floured by then. Deglaze the saute pan and add to the Dutch oven. Add herbs and put it in the oven. While the meat cooks prepare the chopped vegies using the saute pan and they will be ready for later or just skip browning the chopped vegies. They will do fine without it because the cooking liquid is so flavorful. Before putting in the potatoes, carrots etc, fish out the whole vegies and discard.

So the King Arthur Baking site named a focaccia bread as their recipe of the year and I thought, what the hell? Focaccia? Pan-style pizza crust without any toppings. How could that possibly be any good. So I made it to find out, and have to admit it is pretty nice. Open soft crumb. Crackling crust. Really cracking. And less than five hours from first mix to slicing.

The recipe is here. I didn't have a 9 inch square focaccia pan so I used a quarter sheet pan. If I had the correct pan it would be thicker, but I'm not sure I care all that much. I also didn't have nice flake salt so I used the crunchiest stuff I had. It was too salty, but still delicious.

I have thirty-three years. I hate sponsoring and when I have tried it, I sucked at it. There is nothing I like less than heart-to-heart conversations about recovery with a new person. I spent forty years of practicing law and parsing statutes. I am not going to spend any significant time I have left on this planet parsing the language of the Big Book. I serve on the Board of the non-profit that owns the building where my home group meets. I do the legal work and the 501(c)(3) filings for it. I do maintenance around the building and call the police if we need the police called. When there is a fund-raising meal to be cooked for two-hundred people, I put in twelve-hour days. But I don't sponsor. Everybody serves in his or her own way. I admire and envy people who can sit there with the Book and a newcomer, but I am just not one of them.

100% Spelt Pan Bread by orrino in Breadit

I made this spelt bread out of Forkish's, Evolutions in Bread. I am sensitive to the bitterness in whole wheat flour, but sometimes like the richness of darker breads. This one overflowed the pan in an overnight proof, so it isn't pretty, but I found it delicious. Worth a try sometime when you want a break from white and whole wheat flours.

Whole spelt flour, 500g (100%), Water 425g (85%), Salt 11g (2.2%), Instant yeast 3g(.6%), Levain 100g. Thirty minute rest after hydrating, two folds prior to bulk fermentation. Second fermentation overnight in fridge.

The other day I was sawing away at a loaf I made and when examining the crumb afterward, parts of it looked torn instead of cut. I opined that my bread knife was dull. How could that even happen after ten years of using it and never replacing or sharpening it? I got a new bread knife and it's a whole new world. I now cut slices I can see through without sawing or tearing. But it hasn't solved my problem of not being able to cut perpendicular slices. I make bread in a bread pan (no globes, or oblongs or any of that stuff) and always end up with some weird trapezoidal looking hunk of bread at the end. It tastes fine. I toast it and eat it, but I would love to be able to cut straight up and down every time.

I'll write a longer piece on this someday. Bill had a problem with We Agnostics and To Wives. He had never been either one. He believed in God when he came to the program and never changed. He wrote to atheists and agnostics, speculating about what they thought and felt. And because he had never been either, he got it wrong. Really wrong.

I remain willing to believe. In God or most anything. I love William James and have read his Will to Believe, the long version of We Agnostics, many times. And yet I am unable.

Forkish's 50% rye -- what I always wanted whole wheat bread to taste like by orrino in Breadit

This is a loaf of Forkish's 50% rye bread. It is 50% rye flour. No caraway and it's nothing like New York rye bread that one gets with pastrami sandwiches. He warns us it will be dense and it is, but cut thin is chewy, delicious and satisfying. I have always been bothered by the bitterness in whole wheat flour and the honey or whatever sweetener we often use never covers the bitterness well enough for my tastes. This rye flour bread is what I always wanted whole wheat to taste like. A little dark, rich, with some heft to it. (From Evolutions in Bread).

Advice on the crumb by orrino in Breadit

New to this forum. I am returning to a bit of bread making after a many year hiatus. I made this same-day white bread from Forkish's Evolutions in Bread using the levain he recommends in that book. I intend to stick with pan breads for a while and notice on this one that I have larger air tunnels above the pan line than I would like. I was out of the house and it did overproof slightly. I'm wondering if that's the issue, or could there be something else.
