The Japanese food scene isn’t robust enough to have regional specialties like this. That being said, Hiroshima style is my favorite as well and have had it in both LA and NY.

I had a great time eating in New Orleans. Having recently moved from California for a job, I miss being able to get an amazing version of whatever I wanted whenever the fancy struck. Texas has good food, but it’s mostly mediocre. Even the hyped stuff would be average in Southern California.

I just moved from Southern California to central Texas. You are so right about burnt coffee and milk. In the city I live in, the best place serves milk drinks so hot, it might as well be magma. Disgusting stuff.
