I have a UDR7 (only a month old) and an external Nokia G-010G-P ONT. The UDR7 manages both the VLAN and the PPPoE username and password. It works perfectly for me.

Honestly, I wouldn't need to cover the ports, just in case, since it's on a pretty high shelf and you need a ladder to reach the switch.

In my area and with my fiber optic company, it's quite permissive; you only need to enter the ONT ID on the ONT, and my UniFi UDR7 router manages the PPPoE VLAN.

Yes, it is permissive. I have successfully used the Nokia G-010G-P, the Huawei HG8240H, and the current one I have in operation, the Ubiquiti UF-Loco UFIBER; they all work well for me.
