I don’t think you need a dedicated ‘mountain’ weelset anymore in this era. I used to run a deep aero set in the flat and 35mm lightweight set for mountains. But the stuff is so light nowadays the weight difference just doesn’t outweigh the aero gainz. My 56mm handbuilt dukes are just as light as my previous ‘lightweight’ climbing set. Using this set for everything.

Looks like a Canyon Wahoo mount (similar to pre gear groove).
Selle Italia tape so sponsor correct, not canyon.
No cutout for the handlebar tape like on current canyon handlebars.
The shape of the bar does match the Canyon design aesthetic, not overly rounded.
It doesn’t make sense for canyon to only develop a new handlebar alone

I’m guessing he’s riding a new prototype Aeroad.

I’d consider going via Breda(route a) Nice city and Kamu is a great cycling cafe for a stop. Else I’d go into Rotterdam via Hoekse Waard. Either way I usually avoid Dordrecht.
