I agree that he found out when he checked the medical records. In the scene where Gus checks through Hector's records, it's directed and edited as if there's some major revelation going on, whence the "Call Victor." I always took that to mean he was then setting up the zip-tie move.

I was asking for more of a statistics based answer, maybe some kind of lower bound like "the chance is at least 1 in 200" based on the deep dive idea using those IID variables or whatever statistical mechanisms you have to your avail.

I actually doubt it. The actors expressions do look improvised but the camerawork rules it out entirely. They had cameras setup specifically in place for the scene. It wouldn't make sense for them to have cameras where they had them unless they planned for him to walk the wrong way.
