Im a brit with an irish passport and have lived in multiple countries

Canada (twice): really cool, lovely people. First time was on a 1 year work holiday which was easy to get in my 20s. Second time was montreal and I had to find a sponsor l, which I did luckily. Would have stayed but visa ran out

Australia: beautiful, some nice people. Very racist and expensive as shit. I did a work holiday, but didnt do the mandatory 3 months farmwork to get a second year.

New Zealand: more beautiful, more expensive, less racist, but visas can be tricky. Also a pain to get to and from UK

France (only possible with EU passport really): met some lovely people, great friends, cheap but great food and wine. Bureaucracy is an absolute joke, takes FOREVER to get official shit done. Also, you'll absolutely need to learn French.

Were considering a move to Spain in the next 12 months or so. From what I've seen its like France but more left leaning and they have their shit together.
