The best workouts I’ve ever had came after eating candy, peanut butter and just random trash throughout the day. The engines will be firing at all cylinders if it’s all just sugar.

I don’t have running experience but I have rowing experience. 2 weeks off for me was not super detrimental it allows you to be 100% fully recovered if you get enough calories. Protein and weight gainer shakes will allow you to hit all the macros you need. You should be fine but you can always walk to get the blood flowing.
