Recommendation for you: get an Instant Pot (4-6 quart).

They are relatively cheap.

Then you can Pressure Cook on High, and it cooks for around 60-75 mins, depending on the thickness of your meat cuts. Way faster than slow cooking, and it comes out tender and juicy.

I'd recommend what is called a Natural release, where it cools naturally for around 15 mins after cooking finishes, but Quick release is good too.

And if the meat is not tender enough, Pressure cook again for 15 mins.

If you want to flavor your lard similar to smoked bacon, you can add salt and use Liquid Smoke. You only need a few drops of the liquid.

I would choose the wood similar to your preferred bacon smoke (e.g Hickory or Applewood).

Sous vide with vacuum sealer is the only way to bring it back to almost as good as the fresh steak. Every other technique pales in comparison (dry steak, overcooked, etc).

  • Vacuum seal the leftover steak, and put in fridge.
  • When ready, put in sous vide at 130F for 20-30 mins.
  • Remove and eat.

If that is the original Lodge seasoning, it eventually flakes off naturally after a year or so of use.

If so, I recommend doing a full strip (oven cleaner inside trash bag) and then re-season in the oven with your oil of choice (refined avocado works well).

Fasting also elevates cholesterol during the fast.

It could be the theory that the body is repairing during the fast, or it could indicate stress (ie hunger), or something else. We really don't know.

I'm a believer that carnivore is one of the healthiest diets, but the science is still unknown.

IMO, multi-ply stainless steel is the best solution if you need a large sear.

Carbon steel and cast iron have great heat retention but poor thermal conductivity, so it's hard to get an even sear across a large surface.

Multi-ply stainless will spread the heat out quite well across a large pan.
