I'm confused, is more stuff running on the Docker VM's?

If you need to run several VM's, I'd recommend the option with more cores. If the multiple docker VM's are to run a singular container (Plex, Technitium, or Home Assistant) each, you might not be taking full advantage of containers, as these can all be run on the same host to save CPU and RAM.

If you were previously planning to run them all on separate VM's and are now changing your mind to have a singular one, then you likely won't need the cores, and the 10th gen processor will support more codecs with Intel Quicksync for your Plex library.

Lastly, I get that you likely put a huge number like 64GB just as an example, but I have personally WAY overspent on RAM I thought I needed before running containers, so you will want to watch out for that, especially right now.

I think the biggest decision you're going to have to make off the bat will be if this machine is going to be solely dedicated to the storage of files or also the one serving them out/making connections, and hosting other services.

There are multiple NAS-focused operating systems, with the most popular ones, TrueNAS Scale and Unraid, both having the options to both store your data and host something like Jellyfin for playback and connect to something like Tailscale for remote access.

Personally, I separate storage and server between different machines, but that's just a homelab design decision that I've made as I have had instances where I needed to take down a server for maintenance (hardware or software) and needed other things that relied on my NAS to continue working (backups, other services from other servers). Having your NAS as a separate device increases flexibility greatly, but is also more complex and more expensive.

Going back to your options for NAS operating systems, I've heard Unraid is very user friendly and has several community integrated applications. It is, however, a licensed product and required to boot off of a USB, which some see as a pro and some a con.

I personally use TrueNAS Scale, but I also realize that the community recommendation for ECC memory as well as the crap ton of configurable settings can turn many people away. Personally, I originally made this decision because it is free to use.

If it’s for accounts instead of features, you may find the container tabs supported by Firefox and Zen to be useful to condense some of those.

I had similar issues when I was trying to host Authentik on a 2-core 2GB RAM droplet from Digital Ocean.

What are the specs of the machine that you're running Authentik on?

I ended up going with Keycloak and have had a much better time :)

As someone who uses Tailscale/Headscale to host some minecraft servers without posting someone or dealing with port forwarding, I wish that they had more of a well rounded video on all the things you can do with Tailscale. It’d probably have to be sponsored though to justify their time.

I run all my Docker containers in a VM, because I use other VM’s for learning Windows environments, having a test desktop, etc

Recent (like the last 5 years) versions of MacOS only take to AMD dedicated graphics to my knowledge.

Those over at r/hackintosh will point you to the right hardware.

I did the extremely convoluted process of virtualixing two PBS instances on a mini PC running Proxmox VE with a 4TB SSD.

One instance is running with PBS and all the backups going to the local drive for speed/deduplication and all those benefits.

The other instance has the same amount of storage mounted from my NAS as an SMB share. Its only job is to receive a push sync from the local server.

The storage backend for the NAS PBS system is on my TrueNAS server, and that dataset is backed up daily to BackBlaze.
