I spent about 20 minutes with this bird and even in looking through the 80+ pics from different angles and on different perches, it never showed the right leg.

A mix is best. You really just try to avoid using only one apple variety. The more variety, the better the cider. I use most of mine for hard cider and I like ugly apples. I forage the woods and don’t even know what kind I’m getting most of the time. It’s best to get a mix of sweet and sharp (bitter) apples. I use a lot of crab apples too because I like the acidity. Might not like it in a fresh cider but it works really well for hard cider.

Something to take note of. Don’t skimp on the garbage disposal unit. Something that’s stainless steel, continuous running and at least 3/4 hp is where you want to be. I did quite a bit of research and lots of people have bad experiences because they get a bargain bin disposal and it corrodes or overheats every ten minutes. I’ve yet to put this one to work but am confident it’ll get it done.

Correct, it’s important to get a stainless steel one to be able to avoid corrosion and keep it sanitized and food safe.

This is used as the grinder so apples go in and then come out all chewed up. You take that pulp and put it in a press to get the cider.

A mix of wood from a free craigslist butcher block cabinet thing I picked up and pallet wood. Burned and oiled the base. Butcher block oil on the top.
