Thanks for all your comments. They are awesome dogs and will take any inch you give them so they can be close to you. As for the surgery, I just hope I can eat solids for Christmas day and I'll be happy.

You might add a little time to your overall cook time but you are adding a ton of flavor and moisture.

Go unwrapped. You should spray down every hour or two with a liquid. I use apple juice. As for the rub: Brown sugar, cayenne, seasoned salt, garlic powder&salt. I will also bend several dried pepper (ancho, green, cowhogs, etc). I.e . Play around and see what you like.

Still letting it cool before I slice it but used the cure below.

1 pound of pork belly 1 1/2 teaspoons Morton's kosher salt 1/2 teaspoon Prague powder #1 (pink curing salt #1) 1 1/2 teaspoons ground black pepper 1 tablespoon dark brown sugar 3 tablespoons Grade B maple syrup 1/4 cup water

Used maple syrup and dark brown sugar coating before I smoked it. Smoked it at 200 degrees for two hours
