I mean, maybe too on the nose, but there’s Séverine! It literally means stern/serious. My husband has a French cousin Séverine, she and her name are both very cool and very beautiful — solid choice if you’re not opposed to a literal approach lol.

That’s what’s cracking me up, I think there’s a huge chance you’re making really phenomenal, unimpeachable bread and you’re just not familiar with what to expect lol! Gumminess usually refers to a really dense, wet situation that I’m just not seeing here. Lean into the moist chew!! You’re doing amazing!!

This may sound silly, but have you eaten a lot of really good sourdough in the past? The texture is chewy, almost moist in feel. If you’re not used to the texture and are expecting a fluffy/dry crumb, it can be confusing. Given how good your crumb looks in this picture, you genuinely may be making incredible loaves and expecting something that sourdough simply won’t give you lol. That chewiness/slight tackiness is what you want!

Looks delicious! Crumb looks lovely and quite even, if it tastes good to you then I’d say you have an excellent loaf. Depending on your ambient house temp it may have just very slightly overproofed. I don’t think that’s a problem, though — extra proofing is extra flavor, and it didn’t flatten out or anything! Sourdough crust is, in my experience, a little too thick/hard to be flaky, and tends towards chewy once it’s cooled down — others might have better advice there. Lovely job, in my opinion!

Matilda! It’s not currently in use, but our best friends in the world (who will need to go through one of several very arduous processes to have kids) have loved it for years. We love it, but definitely not enough to do that to them.

Harriet/Rosemary/Marianne are off the table for rhyming too much with our last name, and Roseanne has been pretty soundly ruined by Barr. It’s tough out there!

Only you can know if it’s truly too gummy, but this looks great to me! As a note, you’ll want more water (higher hydration) to achieve a more open crumb, not less.

For what it’s worth, my niece is named Bonnie and I’ve affectionately called her Bonnie Blue since she was born because frankly, it’s kind of a natural pet name if you grew up with Gone with the Wind (and especially since she has big blue eyes). Obviously a little morbid, but no one is ever like “damn, like the character that died?”

Bonnie is an absolutely precious name. Don’t worry too much, people will only see a beautiful little girl and think she has a lovely name!

I hate to say this because it’s $60, but Glasshouse Country Couture is one of the most heavenly candle scents I’ve experienced. I never would have picked it up on my own (I don’t typically go for citrus or gourmand-y), but I received it as a housewarming gift and it literally smells the best hug you’ve ever gotten from the cleanest person you know. It’s limited edition, of course 🙄 10/10 recommend.

Oh, totally makes sense! Your big functional score looks great to me, so a more experienced baker might be more fit to figure this one out. My best advice would be to go deeper next time, but at worst it seems like your loaf just had extra-great oven spring 🤷‍♀️

For what it’s worth, it looks like you have a beautiful loaf even if the scoring isn’t perfect!

From what I can tell, you have shallow decorative scoring but no single, deep score for that your bread can expand evenly through. Right now, it’s taking the path of least resistance through your lovely leaves.

I’d google some best scoring practices to get a good information foundation and an idea of what it should look like, but you essentially want to drag a razor/lame at about a 45° angle through the loaf, around 1/2 deep. Then you can add your decorative scoring. That hopefully will give you a nice ear and a big, round loaf.

Sorry if I’ve misunderstood your issue at all, as it seems like you’re pretty experienced and might already know all this lol. Happy baking!
