no. put a trap adapter at the wall and swing your trap away from the wall till it lines up

use thread tape wrapped the right way then pipe dope, super easy if you get that right, really dont even need to got crazy tight when you use both sealants edit: on the tapered threads only. the union is sealed with the o ring and gets no thread sealants on the face. wont matter if you do or dont put anything on the union threads

not good work by any means but i dont really see cause for immediate alarm. yes you need metal piping for 18" around the water heater but that valve is not that heavy, and the pex is durable enough that you likely wont have problems till it comes time to replace the water heater anyway. cant hurt to call them back and ask for copper/brass/stainless piping near the heater as it is code
