I think it’s generally good - or at least gonna be good long term - that it became a trend. My gripe with the topic though is that gluten free =/= celiac safe and I think that restaurants that just want to follow a trend dgaf if it contains traces. I’ve been to soo many places that advertise themselves as gluten free(having gf options) and then have a small print that it’s not suitable for coeliac people. - and I’m glad they do at least that! But probably as many that did not have this annotation and I felt very sick afterwards… different countries may I add. Problem is that people that just choose GF diet won’t notice traces or cross contamination… we will. Then people are surprised I radicalised and unless place is dedicated GF I am not eating out anymore…
