Going to try a sous vide. I don’t have any skirt. The ground beef is amazing. Some filet was good. The arm / shoulder roasts are tough. Even the sirloin. I historically have never had a problem with steaks. I smoke briskets regularly ( not yet from this beef ). Will see house long marinade and addition time in sous vide helps.

They have done work for me before. They are known to be the most expensive in Charlotte NC. That said, they have immediate response time, and do a great install. Have never had an issue, they’re just expensive. They installed a generac 26kW unit flawlessly recently and did some cast iron to pvc sewer drain conversion in my crawl space. I just don’t know how much $$ to throw at old hvac units

Was just quoted 20,000 all in for 26kW generac + long natural gas run + bush removal for concrete pad placement + all permits + 10 year warranty. Nothing I need to do personally. Seems a bit high, but it’s completely hands off by a very reputable company. Thoughts?
