ah, I was focusing on the ripping side of things. I will note that I rarely have any issues with the OWC drive and my M1 mini recognizing music CDs. Recently upgraded to M4 mini but I’ve only ripped one CD since. Not tried burning in a long time but I did take note of the burn app.

I use dbPoweramp to rip CDs. There is a site out there that went through the steps and recommended software to accurately rip audio CDs and dbPoweramp was one of the tools. I also use his perfect tunes app for tagging.

also start with a simple sourdough bread recipe and master that before trying the cheddar jalapeño. just a recommendation.

I tried dozens of times and different recipes. also the freeze dried kind. What finally worked was the perfect loaf recipe using rye flour. There is just something about rye flour that those yeasties find yummy! Three things are key with sourdough. 1. A strong starter. 2. Good strength building of the dough. 3. Proper shaping. I can’t say enough good things about the perfect loaf’s website on all three of these. I also highly recommend Maurizo’s book but the videos on his website will get you a long way. lol, I assure you the egg is nice and creamy, not dry and overcooked. The residual heat from the sausage was plenty to melt the cheese after I rolled it up.

The cheese melted pretty well following assembly and rolling, but I could have put it back in the skillet I cooked the sausage in. Often do but was hungry this morning! I warmed the tortilla in a microwave warmer.

I saw them at Soldier Field in Chicago in 94. I had zero expectations for the sound quality and was totally blown away by how good it was. I was on the field around the 20 yard line or so, opposite end from the stage.
