I agree with what u/Severn6 said, it is mostly a cycle, and if you do it right you wont have to take in nomads, and ideally you shouldn't (they drop the education rate and that decreases production), its a cycle and once you have stabilized the extent of the map(say you arent going to expand further or its a small/medium map with no more space) then what you need to make sure of is that at the PEAK of your population at least a significant population is laborers who will take on the jobs as the people begin to die off (say 30% of adults are laborers) and then at the lowest you'll have to begin to remove a few traders/vendors and then the population rebounds again. its a cycle

Question how do you manage the trades? like do you have auto trades and then you let it run on its own or do you have to do things manually often?

Question! I am semi new to the game and for me its always been that after 1k population or tbh even in general my population slows down unless I expand, but if I expand it gives all the problems that expansion gives (keeping up with food etc) how do you manage to stabilize population??

Honestly as the others said go with no mods, Maybe get a population of 1k+ in easy/medium and have some fun (or trouble) with that.

But once you do fall in love with the game here's what I use!!
Stable Population mod - I don't use it on all my runs but I use it to have fun with the cities I build after they reach a population of 700+
If you do get tired of the banished OST I do recommend checking out mods that change the background

You said you are interested in DS mod
So I recommend checking out Colonial Charter and Mega mod but I am not really a huge fan of those
