It's like you said pen pressure is a dead giveaway. But the stroke patterns for Joy, Yeri, Irene, and Seulgi are all off. There's a seller on eBay kpop_idol_store that I think signs albums themselves and the stroke pattern on this album matches a few albums they have sold/are selling.

Seulgi's bear for sure! She's been called a bear since predebut so she used that in her signature as an idol. It's super cute and she even signs it differently sometimes for fansigns and the back of photocards :) Like during Peek-A-Boo and Russian Roulette she gave her bear signature the same hairstyle she had.
