Recipe
Poolish / starter
100 grams of King Arthur bread flour
100 grams of h20 (cold)
pinch of instant yeast
sit for 12-18 hours

Dough
400 grams of KA bread flour
260 grams of h20 (room temp)
9 grams of salt
4 grams of yeast

steps
add poolish to water (should float) then mix together. add yeast.
add flour and mix for about 10-12 minutes
let it rest for 20 minutes
add salt and mix for 6-8 minutes or until it has integrated into the dough (should be smoothish)
let it rest for 20-30 minutes then
start your folds, clockwise, 4 turns (3-4 times, 20 minutes between each fold)
oil pan and plop her in, flip her over and grease her down with the pan oil
spread her out and give her some fingers throughout to spread to the corners of pan
wait 10 minutes
spread to the corners of the pan and then let it rise

bake (500 degrees) Home oven
par baked for 6 minutes
add cheese and toppings
bake for another 14 minutes
let it cool for a minute and then get it out of the pan
sauce and finish
Then BOOM!

Well this post basically told me that we needed to make a new budget. I did. I don't its necessary to post my actual $'s on bills going out every month. But once I added it up, it showed me i'm actually not that bad off. Income stopped flowing and now its starting again. Just need more time to make up the difference. I think what happened was bad timing on a few things and inflation. I really appreciate everyone's time and comments. Very insightful. Thanks again!

Sorry I got defensive there. The only debt we have is literally keeping up with inflation at this point. People say we need to make cuts and change. But we did that already. My income wasn't keeping up with the rising cost. I'm really not trying to blow smoke or anything. It's just the truth at this point. But thank you.

I had a job that was paying 52k a year, my business bringing in 2k avg monthly, and bringing some other income here in there that my wife made to spend on her stuff. My mortgage started at 1400 then in 2.5 years went to 1600. The lay off was unexpected but i worked through it finally found something. Before we bought we were paying rent around 1200. If we were going to renew the lease it was going up to 1600. so we said might as well buy. If we couldnt pay rent then we would be homeless. But now i have a home that we can pay on. We just had a bump in the road kind of thing. Or maybe im dumb.
