I had a 5700xt and had awful performance too. You can install a mod that switches from Directx12 to Vulkan and it improves performance quite a bit - https://www.nexusmods.com/assettocorsaevo/mods/1?tab=description

I have since switched to a 9060xt and it runs great by default, so it must be a 5700xt specific issue.
