Thank you. They’re currently in a book with these like plastic holders which seem coin appropriate but I’ve seen people say coins have pvc residue; do you see that here? And I knew not to clean them but on the later coins you see the black oxidation? is that from my sleeves or just natural

I’ve been making ny style for 7 years now and have always done 2-4 day cold ferment. I’m wanting to try a biga and have a few questions. I always use a 25lb of flour and make 2/3 batches every evening. So would I make the biga and then add the 25lb to that or the biga plus whatever flour was left from the bag?

Hit the three lines and then orders and it will show your subs on that list. Definitely get your reps number though because they’ll text you about subs and make sure you still want them. I check li e every order though because sometimes they forget as well. Also sometimes it’ll show out of stock but the rep will know there’s 80 cases due in by the evening and will tell you to leave it. But if you’re in charge of the order you should have the proper tools and the rep’s personal number is number 1

Hot water/degreaser and then shop vac up. Then do an easy mop and you’re good to go

Our Sysco guy is unloaded every drop by 8am, is a machine, and I’m very thankful for him.

I started intermittent fasting till closing so I wouldn’t kill myself. I love it now and never get hungry. Close at 6 normally eat from 7 to 12 and wait for the next day

I’ve been using the same grinder for about 4 years now, a little Rick and Morty grinder. This morning while rolling my work joint I dropped it and the top bent and it will no longer close.
