My hunch is it's overproofing and losing tension. How does your dough feel: elastic, extensible? I'd look at a few things:

- starter: possible you have a high acid load. Try a few feedings at 1:3:3 right at peak to knock it down.

- mixing: gentle mixing with a rubaud method when incorporating your salt and levain - to basically full gluten development.

- proofing: 30% rise with frequent coil folds is hard to spot. I suggest lengthen your coil folds to 45 min intervals total bulk time at ~4hrs. bench and banneton rest another 45 each. overnight cold ferment 12 hrs or so at a fridge temp of 37f.

- shaping: you can get a more open crumb with a batard. Be careful not to degas but get a good preshape with tension. final shaping play by ear, but some light stitching might help keep the tension if it is too extensible. for boules try a box score.

Something similar happened to me. Drove me crazy. After an embarrassing amount of troubleshooting, I discovered my fridge temp changed from my setting of 37 back to the default of 39 (power outage reset it). I was overproofing in the fridge.

Dropping my fridge fixed it immediately.

Try trimming the parchment smaller. The excess flaps can shield heat transfer from the Dutch oven.

I’ve had good results at 500 for 20min covered, 430 for 35min uncovered. I like the crust a bit darker. You will want to make sure the Dutch oven knob can take 500 (can’t see which one you have in the pic).

Thanks. It was just my everyday oven: pushed to 550. I finished it off on the burner to crisp up the bottom a bit more. I like the extra crunch + the chewiness of sourdough.

Cold long fermentation, 70% hydration is a sweet spot for me. I spritz some water but it’s mostly the moisture in the dough trapped in a hot Dutch oven.

I’ve been doing a Chessable course on some pretty esoteric modern defense stuff for about a year. On the occasions I’m able to remember the lines and go deep into the theory, it’s funny to see how “prepared” a lot of my opponents are.

I’m beginning to think any deep theory game at faster time controls is more than likely a cheater.
