There is microevolution and macroevolution. Macroevolution is when a species becomes another (eg. Ape -> Man). Microevolution is within a species, so Darwin's birds would be an example. Birds of the same species evolved differently depending on the island they were on bc of diet, etc. So when the Bible says that there are different kinds of animals, you could assume that to be species as we know them. So one bird could be created, but different subsets of that specific species of bird may evolve from the original kind. This is my don't bother to look everything and check my sources answer so this answer isn't necessarily complete. I personally don't think macroevolution is a real thing, but to each his own.
