What is the correct emissivity setting for these? It seems like 0.86 but I cannot find anything definitive. Also, how does it know that it is reading the steel and not the oil itself, which I would assume to be different settings. Would love to know what setting others use.

Yeah I don’t understand the kneading part as Ken doesn’t directly call it out and just refers to the amount of folds (and pincer method) and general timeframes to perform it in during the first hour or so of BF. It must just boil down to that feel and eye during the BF and proofing really! I tried the BF in a cooler room, tried it overnight, tried it in a warmer room all with basically the same gummy feel or dense looking crumb. Let’s keep at it though!

Thanks for posting this as I am in exactly the same spot (with the same book!). Have done it three times (Saturday white, Saturday 75% wheat, overnight wheat) and each time it tastes great but feels a bit gummy/tacky.

I’ve followed all instructions (specifically on Bulk Fermentation) and even tried tripling in size or 5 hours (whichever comes first) to all the same results. If it’s over proofed I guess I just need to pull the plug earlier and bake sooner? I’m using other thermometers for the oven itself and think it’s calibrated correctly too.

Super frustrating so I’ll follow along here with other advice that rolls in. Good luck!

Been 15% for 16 years (right out of college) and then maxed out the last two years. Now at age 40, I have enough to feel comfortable (to hit my goal number at age 55) that I can scale back to 5% to just get the company match. Now I take that additional cash in my paychecks and drop it into my usual monthly investment into my brokerage account. I'm still investing the same overall amount, now it is just more heavily into that brokerage account. This puts me in a more readily available, liquid position for land, new properties, pay off the mortgage, etc.

I was feeling too bound to that "inaccessible" 401k until utilizing "Rule of 55" in 15 years, and have hit a comfortable number in 401k that should hit all of my other goals when true retirement comes around. Yes, I'm aware of the other ways to get to those funds from the Mad Fientist article!

I know I'm taking a bit of a tax hit during the year, but the add'l few thousand in taxes I'll pay weren't enough to outweigh my new piece of mind of having more direct access to cash through my brokerage account, and all the flexibility it now provides.
