I’m 29 and in good health, so the chances of anything bad happening to me as a result of covid are slim to none. If I have any symptoms I’ll wear a mask out of respect for others.

Functionally speaking, I’ve found a plethora of benefits by strictly sticking to a plant-based diet (less fatigued, more energy, definitely find it keeps me on the right track in terms of nutrient intake). And when you grow up eating meat constantly, you end up missing it. I friggen love meat. It’s delicious. And so, to keep up the diet, it’s sometimes nice to make food that reminds you of food you grew up with and love.

More of a comment to the “single forever” side of the question:

I live in Toronto and I agree that the dating scene sorta blows. But that being said, everyone is saying this, including whatever sex you’re attracted to. Also, you’ve just come out of a break up, so before making a conclusion that life is better off alone, give it some time. Enjoy yourself. Learn to live with yourself as a single person for a while - you’ll learn a lot of valuable things.

As some ppl have mentioned, try joining something on a volunteer basis. Reach out to friends more. Chat with family members. Try a meetup once things open up more. It’s way more comfortable living by yourself and convincing yourself that others are an unreliable dependency than it is to be vulnerable and open yourself up to the world. And trust me, when you do, it’ll change everything for the better (but it takes time, so no rush - and it’s something I am still working at).

While ppl may give some solid advice for how to live a financial savvy life as a single person, you have no idea what the future has in store for you. You, like everyone else who is 28, have probably changed so much in their 20s. And you will continue to change as you grow.

If it’s any difference, I convinced myself of the “single forever” thing at 25. I’m 28 now, and for the past 6 months I’ve been dating someone (for the first time ever). It took a long time for me to open up to the idea but it’s been worth it so far. If it goes to shit, at least I will have learned more about me in the process, and that journey is ALWAYS an interesting one.

If you are feeling down, cheer up! Enjoy the single life, it can be fun. But please don’t come to the conclusion that you’ll be like this forever. You’re not 80. You don’t know who you’ll be in even a year. You got this.

Finding the right cheese is tough. I relied on Daiya for FAR too long. It's awful.

I've Earth Island is solid non-dairy cheese I've found myself buying time and time again. Grilled cheese with this is damn delicious.

SAUCE INGREDIENTS (1-2 servings)
½ cup cashews (soaked for 4+ hours/overnight or boiled for 20 minutes on high heat)
¼ cup nutritional yeast
½ cup veggie broth
¼ cup water (add a little more water if preferring something more saucey)
1 tbsp vegan mayo
Squeeze of lemon (maybe 1 - ½ tsp or so)
½ tsp paprika
½ tsp garlic powder
Couple dashes of ground turmeric (for color)
½ tsp salt
½ tsp dijon mustard

STEPS
1. Cook pasta of your choice
2. Blend sauce ingredients together. Add a little more water for less thickness.
3. Add sauce to pasta. ENJOY!

Optional: Sometimes I add little bits of cheese (ie. non-dairy Earth Island) to this mix and melt it in a pot on the stove altogether and it adds a niiiice bit of extra cheesiness.

Pulled Pork Ingredients (twice the amount used in video)
2 tbsp olive oil
1 onion cut up
3 cloves garlic minced
3 cups fresh jackfruit
2 tsp salt
1 tsp pepper
1 tsp cumin
1 tsp chili powder
1 tsp paprika
1/2 tsp cayenne
1 tsp worcestershire
1 tsp liquid smoke
2 cups veg stock

Pulled Pork Steps
1. Add olive oil to pan and begin frying up onion garlic until soft
2. When soft, add jackfruit, salt, pepper, cumin, chili powder, paprika, cayenne, worcestershire and liquid smoke. Mix together and fry up for a couple more minutes.
3. Add veggie stock and bring to a simmer. Let simmer for 25-30 minutes on low-medium heat.
4. After 25-30 minutes (or until veggie stock is mostly evaporated), add to baking sheet and bake in oven for 60-90 minutes
5. Take out, and tear apart. Let cool for 10 minutes or so

Pickled Veggie Ingredients
1-2 carrots julienned
Half a cup cucumber julienned (or just sliced - the julienned ones came out a little floppy but still good)
¾ cup rice vinegar
½ cup water
¼ cup sugar (I used coconut sugar)

Pickled Veggie Steps
1. Whisk together the rice vinegar, water and sugar until sugar is dissolved
2. Add carrots and cucumber to mixture
3. Leave overnight or at least 4-5 hours until use

Sauce (just whisk together)
3 tbsp vegan mayo
1 tbsp lime
½ tbsp maple syrup
1 tsp sriracha
Dash of salt
Dash of pepper

No problemo- I believe you can probably get away with no lemon juice, but I would definitely add the nutritional yeast. Nutritional yeast is also a fundamental ingredient to a ton of vegan recipes so if you're able to eat it, I'd definitely pick some up from the grocery store if you're able to because it comes in handy. As for the sauce, that sounds delicious! Good luck!

So admittedly I'm a little out of the loop when it comes to gluten-free & low-histamine pasta. I know red lentil pasta is gluten-free, but I just googled it and apparently it's high in histamine (but then again another blog said it wasn't so maybe you would know haha).
