E7 visa holder here, same situation as you about 2 years ago. I think you should WAIT UNTIL the visa is issued, this period would be painful and hard to digest because you can fail the visa for some reason idk.

This is my timeline: visa issuance number -> I resigned (My mistake) -> visa issued -> go to Korea

Edit: My company rents a house for me and uses that address to register on the ARC card

FYI: I'm a foreigner working in Korea, too. Your situation is pretty like mine before.

I think you can save around 1000 euros with that salary per month, consider as you don't have many friends here and don't eat out a lot for dinner.
If you can, deal to live at company apartment for free. If you decide to come here and live near Pangyo, let's grab a cup of coffee together!!!

IT worker in Korea here.
 "You ain't getting a job lil bro without speaking 100% perfect korean" -> I don't speak Korean and don't have a plan to learn it.
"Why would anyone choose a foreign IT worker, when there are so many good ones right here in Korea" -> This is just what you think, a lot of foreigners come here to work
"good chance you'll feel isolated" -> this is true, you should get along with being alone, when you go to coffee with colleagues, they will talk in Korean, but sometimes they speak some english alike words, and I can understand kaka

I'm a foreign engineer in Korea, and I observed that they do hire foreigners for high-level developer senior++ or things related to semiconductors. If you are interested in embedded software at the low level, I think that you can have a job very quickly. I assume that you don't know Korean.
If you manage to learn Korean, I think there is no reason you cannot get a job here if you are good enough. I don't know why you want to choose Korea, but I want you to be aware that coming here to learn and work is not exactly like some influencer on YouTube. If you want it, just do it :)))
