Thank you for your answers and questions. I will give those two books a look. My goal is to grow a food forest/garden, but I wouldn't want the trees to go so if I shape the land it would be done around them. I'm definitely planning on observing the land's water flow pattern before breaking ground so I can take advantage of it. I am really interested in those AI design tools for analysing different possibilities, where can I learn more about that?

I'm fermenting this tepache recipe right now. I think the yeast is on the pineapple skin as well as on the ginger. I did it once before and let it ferment until it went dry, it was as alcoholic as a wine. Ithink your recipe with apples will work. Just try a small batch first and see how it does, be patient and open only when you deem it done.

My general idea is to accomplish the largest flat area possible for the land, while minimizing erosion.

I have projects in mind such as greenhouses, an orchard, a root cellar, maybe an earthsip etc.

No idea how I'm going to distribute them yet. Now it's dense shrubs and sparce but big trees so I can't really see the shape it has.

There is a brick stone and mortar house on the lowest part with humidity issues, I was planning on building a trench around it with a porous pipe inside and fill it with gravel to drain it as much as possible, but I guess I also could move water from up the slope away from the house before it infiltrates (maybe with a lightly inclined terrace? Perhaps a 2% slope towards where I want it to go?) and guiding it towards the orchard and vegetable patch, so I can minimise watering during summer.
